    Had a trainee with me all week. Only a couple of weeks into her course and out on in cab experience so she'll have some idea of whats what when they're doing the classroom work.

    Last day today so I say

    "Do you want me to sign anything for you?"

    Her- weird look and a "err yeah,ok"

    Me "I'm not offering you my autograph,do I have to sign anything to confirm you've done the hours"

    Her- "Ah,got ya, that makes more sense"

    Supposed to be a year from start to qualified but generally takes a bit longer as there's normally a few delays.

    Anyone ever lay astro turf on a small balcony?

    A couple of the slabs are a bit loose and I noticed the other day the slabs are sitting on these sort of pedestal like things?

    Can I just take up the slabs and these pedestals and lay the astro or is there more involved? We are a second floor balcony so I am just wondering about drainage and do I need to keep these pedestal things?

    Got a Ooni Karu pizza oven a couple of weeks ago, but only got round to using it at the weekend. Some bloody device it is.

    Used a pre made base for the first go, just to get used to it and it was nice. Then I had dough which I made for the second and third goes. Some difference in taste when you use your own dough. You can have pizza within 2-3 minutes of the oven reaching temperature.

    Soon I’ll be offering pizzas and pints as takeaways !!:D

    Question for any chefs on here. I think there is at least one... I’ve a big bag of flour , a 25kg bag. I’m looking for a large air tight container. Could you point me in the direction of where you get yours please whether it be online or a store? I can’t see to find a air tight one. Cheers.

    I don’t think a hardware store would stock then would they? They need to be air tight so the flour doesn’t go off.

    Nisbitts do a good line of things you can get on line handy enough Ron

    We uses big specialised bins on wheels in work for storing them

    Company called cambro do alot of good storage boxes with lids that are tough plastic and suit our busy kitchens

    you may find some cheaper options on line that them but the strength and quality may not be the same.

    Keep any batch codes and details when de canting bags of flour so you have them handy incase any product recalls

    Pa you must be doing some amount in the ooni :)

    If I was in work I could get you one tomorrow.

    Cheers Gerry. I got a big bag of the 00 Caputo flour from a wholesales, so want to open it, but I've read online once you open it, you need to keep it air tight. Those websites will be dead handy. Ive seen places in the UK doing the ones with wheels, so ill have a look for them.

    So if 20 IK members pay €100 for a weeks accommodation they'll have free beer and pizza?
    I'm in.
    Only need 19 more names lads!

    Of course if we get 40 names it will only cost €50 each.
